Get to know Chef Derek Gherkins, the Chef behind many of Park City’s Best Restaurants including Grappa, Ghidotti’s and Windy Ridge. Begin the evening with an Oyster Trio, and experience Chef Derek’s Citrus, Green Apple, and Grape Mignonettes. The five-course dinner continues with Roasted Beets and Honey Chèvre on Endive with Toasted Pistachios. The main course is a tender Filet Mignon with Roasted Winter Vegetables sauced in a Cabernet Demi-Glace and garnished with salsa verde. For dessert, Chef Derek is serving a Floating Heart topped with shaved chocolate.
